Last week, MORE visited a new European food concept at Grand Canal Place, 66 Lishui Road (next to Kempinski Hotel), namely FRIEDA Restaurant and BERTHOLD Delikatessen. Their hospitality was outstanding with welcome smiles from every team member AND their Black Forest Cake was divine! After a quick coffee and hot chocolate, we took the opportunity to interview Lukas Jansen (Manager - FRIEDA Kitchen & BERTHOLD Delikatessen) and Jakob Ehrensberger (Chef de Cuisine - FRIEDA Kitchen).
We found Jakob to be a very focused chef and Lukas to be both gentlemanly and humorous. After learning more about their team and food and goals, I had to cheekily ask about trying some of FRIEDA’s menu which we found to have surprisingly delicate and sophisticated features.

M: Who is Frieda?
L: Frieda is young. She’s warm-hearted, caring and hospitable. Frieda takes care of people with the feeling of home and the dishes of home.
M: If you could bring anyone to dine at FRIEDA, who would it be and why?
J: I would bring my friends. I have a lot of friends who are chefs; one in London, one in Germany, some in Switzerland and France. I would love to cook for them so they can see what I’m doing in China.
L: I want to show and surprise Hangzhou people with how we look after our guests and react to their likes or dislikes. We have the chef preparing the beef tartar tableside and are looking to do the Fire Tongs Punch (Feuerzangenbowle – a spectacularly flaming mulled wine) from the new year, which is something we do at home for old friends.
M: If “the president” came to FRIEDA, what one dish would you serve them?
J: I would suggest the Pork Belly, it’s a really good dish. The pretzel is kind of traditional but it is quite elegantly prepared and presented. OR, to have the Wiener Schnitzel which is made the traditional way from veal.
M: What’s your dream ingredient?
J: For me, I have a few BUT I’m always happy and glad when I can get fresh and crunchy vegetables.
M: What else do we have to look forward to at FRIEDA?
L: FRIEDA and BERTHOLD work together to give four distinct spaces; day bar, coffee shop, dining room and deli. Soon we’ll have a fantastic wild pork sausage filled with gruyere cheese AND, our 4 course Christmas Dinner (580RMB) is now available.
FRIEDA offer great value 3 course set menus for lunch (128RMB) and dinner (280RMB).
The knife cuts the Wiener Schnitzel (235RMB) with a delicate crunch before giving way to the soft pillowy crumbed veal. Squeeze a liberal amount of lemon juice and enjoy it with the cranberry jam. (I was also happy to eat a lot more of the sautéed potatoes). Loved it.
Demonstrating the calibre of the restaurant was the Halibut & Prawn (262RMB) served atop a delicious bisque with fondant potatoes and marinated courgette. The black tiger prawns were fried in butter and the fish perfectly steamed. Liked.
I was surprised by the Risotto from Pearl Barley (160RMB), it was filling and great for sharing - somewhat like a “winter salad”. Enjoyed.
We were very impressed by the Beetroot salad (lunch menu) which featured cress, roasted vegetables, radish and lemon cream fraiche. Amazing.
The Black Forest Cake is a signature dessert of which there’s a FRIEDA presentation and a deli version at BERTHOLD. Pictured is the deli version (45RMB). Awesome.
I’m not sure how but, we left FRIEDA with a picture of Apple Strudel (64RMB) without having tasted it. I’ll be back to try it soon for sure. Looked so Good.
FRIEDA is open from Wednesday to Sunday, 11:30am - 2:30pm and 5:30pm - 10:00pm.
